Cuisine
Bolan serves contemporary Thai cuisine, faithful to the flavours and balance of Thailand and approached with the precision of French culinary technique. It is not "fusion" cuisine: French technique is used in service of Thai flavours.
Team
Bolan was founded by Bo, originally from Ayutthaya, and Pedro Aires, a chef trained at École Ferrandi Paris, with experience at Le Céladon, Sellae and Mensae. Pedro Aires is chef and co-founder: he oversees the restaurant's culinary direction and menu development. Bolan opened to the public on 2 March 2026.

Bolan is closed all day Wednesday and for Thursday lunch. On Thursday evening the restaurant is open from 19:00 to 23:00. The kitchen closes at approximately 22:30; dinner service ends around 23:00 depending on guests.
Lunch set menu
The lunch set menu is available on Monday, Tuesday and Friday, from 12:00 to 15:00: 2 courses at €19 or 3 courses at €23. On Saturday and Sunday at lunch, the restaurant serves its regular à la carte menu. Details on the Lunch Menu page.
